observed food thermometer probes stored with dried food residue and can opener blade with metal shavings stuck to blade. CA: clean and sanitize. keep food contact surfaces clean to the sight and touch. COS: removed from storage to properly clean.
6-2 - proper date marking and disposition

observed time control for safety foods in reach in refrigerator beyond the 7 days allowed. Code requires foods that require datemarking shall be discarded if exceeds 7 days, not including the time that the product was frozen. COS: 11/20 lima beans, 11/19 peas, 11/25 dumplings, and 11/27 dairy whipped topping were all discarded.
