Observed in reach in cooler beneath prep-top: raw shrimp above diced tomatoes, raw philly steak beside tomato, raw duck beside raw shelled eggs; reach-in cooler drawers: raw steak above cooked meatloaf; in prep top cooler: raw shrimp behind noodles, raw shrimp behind collard greens; in walk in cooler: raw shrimp beside cooked sausage, raw chicken beside pasteurized liquid eggs. PIC moved items to approved locations.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed sanitizer in bucket and in 3-compartment sink at 0 ppm. PIC added new sanitizer container and re-made sanitizer.
