Observed queso in steam table at 98F. PIC moved queso to stove top to be re-heated to 165F.

Observed cooked birria from 05/13/26 at 64F in walk in cooler. PIC discarded birria.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed food or food related items stored below chemicals in dry storage ares. PIC moved items to appropriate locations.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Observed employee drinks and belongings stored on/above food prep surfaces. PIC moved items to appropriate location.
