OBSERVED RTE TCS FOOD ITEMS COLD HOLDING FOR MORE THAN 24HRS IN REACH-IN COOLER WITHOUT PROPER DATE MARKING. PIC EXPLAINED THAT HOT DOGS WERE PREPPED FOR TODAY BUT HAD YESTERDAY ON STICKER. CA: DISCUSSED WITH PIC THAT DATE MARKING WITH ACTUAL NUMBER DATES WILL BE DONE TO CLEARLY DATE MARK FOR ALL PREPPED FOOD ITEMS HOLDING FOR MORE THAN 24 HOURS.

Observed cot used for sleeping in rear of facility break area that opens directly into food service area. CA - Discussed that any room used for sleeping quarters cannot open directly into food service area. Furniture used for sleeping (cot) will need to be removed.

Observed TCS food items prepped over 4 hours prior cold holding at temperatures above 41 degrees F (see temperature log). CA: PIC discarded foods. Discussed with PIC about changing plastic food containers to metal to allow foods to cool down properly.
