Observed reach-in cooler holding food items above 41F. CA: Cold holding equipment must be maintained in a condition of good repair capable of meeting requirements of rule (cold holding TCS foods at or below 41F). COS: All food items (non-TCS foods and TCS food prepared and placed in reach-in <4 hours) were moved to walk-in cooler and maintenance was call immediately.
15C - nonfood-contact surfaces clean

Observed fan covers in walk-in cooler not clean. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. CB: CFSM will have fan covers cleaned.
