OBSERVED STACKED DISHES THAT WERE STILL MOIST TO TOUCH. CA: EQUIPMENT AND UTENSILS, ARY DRYING REQUIRED, SHALL BE AIR DRIED OR USED AFTER ADEQUATE DRAINING BEFORE CONTACT WITH FOOD. COS: PIC WILL ENSURE WAREWASHING STORAGE IS DRY AND DRAINED BEFORE STORING AND STACKING.

OBSERVED GASKET ON WARMER CABINET NOT IN GOOD REPAIR. CA: EQUIPMENT COMPONENTS SUCH AS DOORS, SEALS, SHALL BE KEPT INTACT, TIGHT, AND ADJUSTED IN ACCORDANCE WITH MANUFACTURER'S SPECIFICATIONS AND MAINTAINED IN A STATE OF REPAIR. CB: PIC WILL SPEAK TO OWNERS AND PUT IN A WORK ORDER FOR EQUIPMENT.

OBSERVED FLOOR UNDER THE FRYERS TO BE ACCUMULATING GREASE/SOIL. CA: CLEANING, FREQUENCY, AND RESTRICTIONS - PHYSICAL FACILTIIES SHALL BE CLEANED AS OFTEN AS NECESSARY TO KEEP THEM CLEAN AND BY METHODS THAT PREVENT CONTAMINATION OF FOOD PRODUCTS. CB: PIC WILL PUT IN PLACE A CLEANING SCHEDULE/FREQUENCY TO ENSURE CLEANLINESS AND GOOD REPAIR IS MAINTAINED.
