OBSERVED FOOD STORAGE CONTAINERS IN USE WITH NO IDENTIFICATIONE. CA: FOOD OR FOOD INGREDIENTS REMOVED FROM THEIR ORIGINAL PACKAGES FOR USE IN THE FOOD ESTABLISHMENT AND PUT INTO STORAGE CONTAINERS, MUST BE IDENTIFEID WITH COMMON NAME OF FOOD (SUCH AS COOKING OILS, FLOUR, HERBS, POTATO FLAKES, SALT, SPICES, AND SUGAR) SHALL BE CLEARLY ADN LEGIBLY IDENTIFIED, IN ENGLISH, WITH THE COMMON NAME OF THE FOOD. CB: PIC WILL LABEL FOOD STORAGE CONTAINERS WITH COMMON NAME IN ENGLISH.

OBSERVED FOOD ITEMS BEING COOLED IN COLD HOLDING EQUIPMENT (WORKING UNITS ON COOK LINE) THAT WAS ACTIVELY IN USE (SALSA VERDE IN PAN WITH LID) AND THAT WERE COVERED IN INSULATED MATERIAL (SALSA RED IN STYROFOAM TOGO CONTAINERS). CA: FOOD CONTAINERS IN WHICH FOOD IS BEING COOLED SHALL BE: ARRANGED IN EQUIPMENT TO PROVIDE MAXIMUM HEAT TRANSFER THROUGH THE CONTAINER WALLS, LOOSELY COVERED TO FACILITATE HEAT TRANSFER FROM THE SURFACE OF THE FOOD. COS: PIC HAD STAFF MOVE FOOD ITEMS TO WALK IN COOLER WITH LIDS REMOVED DURING INSPECTION TO FACILITATE RAPID COOLING.
