PIC PUT IN MAINTENANCE ORDER FOR PREP COOLER AND WILL USE ICE BATH ALONGSIDE TPHC METHODS UNTIL PREP COOLER IS FIXED.

PIC stated that rotations got mixed up due to labeling and brought foods out to the line before finishing the full 6 hours to cool down. CA: PIC discarded lettuce, but had time to relocate other food items back to walk-in cooler to finish cooling.
