Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed a case of half and half past the manufacturer's use by date of 12/10/2025.
COS: CFSM discarded the product. Charlton EH discussed ensuring manufacturer dates were not expired and proper date marking for items prepared, frozen, and removed from freezers to coolers.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(c) - backflow prevention (p)
No air gap at prep sink or outside pot sink.
CA: Charlton EH instructed CFSM to have an air gap installed between the drain piping and the sewer to prevent backflow of sewage into the sink basins.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(10)(d) - equipment; food contact surfaces not recontaminated during reassembly (c)
Observed interior damage in a microwave in the form of bubbling on the ceiling.
CA: Charlton EH instructed CFSM to replace the microwave.
