Routine
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Walk-in-cooler is not holding time and temperature controlled for safety (TCS) foods at 41° F or below. Foods were temped at 43.5-44° F.
CA: Owner called maintenance to come and service the equipment. Owner stated that the WIC will be fixed within 72 hours.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Handwashing sink being used to dump food waste. Observed lettuce and sauce in the handwash sink basin and drain.
CA: Handwashing sink may not be used for purposes other than handwashing. Discussed with CFSM.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Facility did not have any hot water available. Water temperature was 83.5° F.
CA: Facility closure until hot water temperature of at least 110° F maintained.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(h),(i) - approved sewage disposal; system; other liquid wastes and rainwater (p) (c)
Condensate leaking in WIC onto foods via splashing. Observed a soaked cardboard box with a mold-like growth on it that contained factory wrapped pepperjack cheese slices.
CA: CFSM discarded the box of pepperjack cheese as well as an open pack of cheese that had condensate dripped onto it. CFSM mopped up the condensate on the floor and placed a plastic bin to catch the leaking condensate. Owner called maintenance to have WIC serviced to fix leak and have the condensate properly disposed of.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(c) - multiuse food-contact surfaces (pf)
Observed deep scratches on cutting boards at prep top counters.
CA: Food contact surfaces must be smooth and nonporous to be properly sanitized. Owner stated cutting boards have been ordered but are on back order.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed damaged floors in lobby and food prep areas. Observed a damaged wall section in front lobby. Ceiling tiles are stuffed into the ceiling in the back kitchen with exposed fiberglass.
CA: Floor needs to be repaired/sealed, especially in food prep areas. Wall section needs to have new drywall. Ceiling tiles need to be replaced properly to prevent dust from tiles or fiberglass insulation from breaking and falling onto food prep areas or inhaled by employees/customers.
