Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple TCS food items (birria, chicken, shredded cheese, beef soup, pickled onions, soup, vanilla tres leches, and chocolate tres leches) in the walk-in cooler, prep-top cooler, and dessert display cooler cold holding above 41 F. (COS- PIC disposed food items.)
RCA: Ensure all TCS food items are cold-holding at 41 F or below at all times.
