Observed knives stored in still water at 70 F and a single-use portion cup stored in the container of ranch. RCA: Ensure all in-use utensils are stored in running water at any temperature, are stored in still water at 135 F or above, or to clean utensils every 4 hours.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed pans stacked while wet. RCA: Ensure all dishes are air dried prior to stacking.
