Observed no hand soap available at hand washing station in the main kitchen.
CA:PIC supplied hand soap.
RCA: Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap.
4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed shrimp and chicken wings uncovered in the main kitchen, wonton strips laying out uncovered in a pan in the storage area.
RCA: Store food in packages, covered containers, or wrappings to prevent from overhead contamination.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed multiple TCS and RTE food items in prep top cooler, reach in cooler, and walk in cooler (cooked chicken and pork, egg rolls, skewer chicken) that was stored for more than 24 hours without dates of when food was prepared and when to discard.
RCA: Food items stored should have the date or day of preparation, with a procedure to discard the food on or before the last date or day by which the food must be consumed on the premises, sold, or discarded.
