Observed raw shelled eggs to be stored directly above tomatoes, onions, and lettuce.
CA: PIC properly separated the raw shelled eggs from the ready to eat foods.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed an open package of hot dogs, cut tomatoes, cut onions, and cut lettuce to not be properly date marked with the prep date or the date that the item was opened.
CA: PIC discarded all items that were not date marked.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed all doors leading to the outside of the facility to have large gaps and not tightly sealed to prevent entry to pests. RCA: Outer openings of a food service establishment shall be protected against the entry of insects and rodents by:
(i) Filling or closing holes and other gaps along floors, walls, and ceilings;
(ii) Closed, tight-fitting windows; and
(iii) Solid, self-closing, tight-fitting doors.
