6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several items in the walk-in cooler to be above 41F. Walk-in cooler is broken. Ambient in walk-in was 50F. eggs(58F,60F)cheese 47F,50F) Corndogs (56F,58F), hotdogs( 52F,57F).
RCA: PIC throw out all TCS items that were above 41F. Advised PIC that no TCS food items can be in the walk-in cooler being that it is broken, and to keep items in the reach in coolers.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed ice machine to have a pink build-up in the inside.
RCA: Told PIC to increase the cleaning frequency of the ice machine to ensure no future build-up. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed ceiling in lobby area to be leaking in curtain areas as well as having some water damage.
CA: PIC told me that someone was coming out to fix ceiling leak since its been an on going issue. All physical facilities shall be maintained in good repair.
