Observed raw chicken stored above raw beef in walk-in cooler.
COS CA: PIC re-arranged raw meats in walk-in cooler to avoid cross-contamination from raw animal foods.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods stored in walk-in cooler to be above 41F (pollo, carne, pintos, arroz), ambient temperature in walk-in cooler at 47F.
CA: PIC discarded TCS items temping at 41F or above out of walk-in cooler. PIC contacted their repair team to have walk-in cooler inspected and fixed. PIC shall store all TCS items in functional front reach-in cooler until walk-in cooler is repaired or hold on an ice bath ensuring that all foods are kept at 41F or below.
Follow-up 12/16/25 Observed that facility walk-in cooler has been repaired with an ambient temperature of 34F.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed chemical spray bottles to be touching and hanging off of clean food-contact equipment. Observed not-in-use chemical bottle to be stored on-top of equipment.
RCA: PIC shall remove all chemicals from clean equipment and properly store chemicals as to prevent food contamination. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles.

Observed chemicals to be stored without common chemical name or label.
RCA: Cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material.
