Observed TCS items cold-holding above 41F in self-service salsa bar (see temperature log). COS: PIC stated items above 41F held in cooler since 10:00 AM. Employee discarded items.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed facility did not have correct type of testing strips for type of sanitizer used in 3-compartment sink (quat). RCA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
