4-2A - food stored covered
Regulation: 511-6-1.04(4)(c)1(iv) - packaged & unpackaged food, food stored covered(c)
Observed flour and breadcrumbs uncovered and exposed in the prep-station. Observed open box of biscuits in freezer to be left open.
COS: PIC covered all food-items. All food shall be protected from overhead contamination by having a proper lid or covering.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(c) - storage, separation (p)
Observed a bucket of sanitizer stored on-top of a box of chicken in main prep area.
COS: PIC removed sanitizer bucket and placed it in designated area as to not contaminate any food or single-use items.
CA: Poisonous or toxic materials shall be stored so they cannot contaminate food.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed large amounts of grease and food debris on floor around fryer. Observed a layer of flour and breadcrumbs debris on floor around prep-station.
RCA: PIC shall have staff move equipment, clean debris and build-up as to prevent any food contamination. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
