6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed a pack of pulled pork and pepperoni in reach-in cooler to be past the 7 day expiration window.
COS CA: PIC discarded food with expired date marking. Labels shall have the prepared date clearly marked. All TCS food prepared and held for more than 24 hours shall be labeled and discarded after 7 days, with the packing date as day 1.

Observed salmon in reach-in cooler to be in reduced-oxygen packaging.
COS CA: PIC removed salmon, unpackaged and placed back in reach-in cooler. RCA: Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment prior to its thawing under refrigeration that maintains the food temperature at 41°F or less. And prior to, or immediately upon completion of its thawing, using procedures to completely submerge in running water.
