Observed raw beef stored above ready-to-eat pork items (Ham, deli ham).
COS: PIC re-arranged walk-in so all ready-to-eat food is separated from raw food. PIC stored meats per cook temperatures. CA: Food shall be protected from cross contamination by separating raw meats by cook temperature and ensuring RTE food is stored above any raw meats.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed hand wash sink near three-compartment sink to have old seasoning container and used utensils in the basin.
COS: PIC removed items from basin of sink. CA: A handwashing facility may not be used for purposes other than handwashing.
