Observed wet nesting in dish drying area.

RCA: Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:

1. Shall be air-dried or used after adequate draining before contact with food; and

2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Observed ice machine in main kitchen to have black build up in the baffles.

RCA: Equipment food-contact surfaces and utensils shall be clean to sight and touch.

Observed multiple food items (tomatoes, spaghetti sauce, cooked mushrooms, etc.) stored inside the reach-in unit without proper date labeling.

CA/COS: PIC applied appropriate date labels to all food items that were prepped on 11/16.

Observed reach-in coolers and freezers located outside to have old food debris accumulated at the bottom of the units.

Observed the walk-in cooler fan to have white residue built up between the gaskets.

RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed Potato, Broccoli, Cucumber salad uncovered in front food service display.

CA: Directed PIC to cover salads with plastic wrap loosely to ensure protection of debris from ceiling or other contaminants.

RCA: Storing the food in packages, covered containers, or wrappings, except for loosely covered or uncovered containers in which food is being cooled if protected from overhead contamination.
