6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple items (beef franks, hot dogs, raw beef, and raw chicken) in the reach in cooler to be cold holding at a temperature above 41F.
CA: PIC discarded all TCS items in the cooler.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed multiple small shallow pans to be stored inside the basin of the handwashing sink.
CA: PIC removed all items from the hand washing sink.

A handwashing sink shall be maintained so that it is accessible at all times for employee use.

A handwashing facility may not be used for purposes other than handwashing.
10B - water and ice from approved source
Regulation: 511-6-1.06(1)(a) - approved system (p)
Observed the mobile unit to be using the water at the vending location, which is not an approved source, to fill the mobile unit's water tank. RCA: Mobile unit fresh water tanks must be filled at the base of operation or an approved source.
Rule: Enough potable water for the needs of the food service establishment shall be provided from an approved source that is a public water system; p or a nonpublic water system that is constructed, maintained and operated according to applicable state or local codes as amended.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(h),(i) - approved sewage disposal; system; other liquid wastes and rainwater (p) (c)
Observed the mobile unit (trailer) to be connected to the sewage piping meant for the building that is located at the vending location for the mobile unit.
RCA: Disconnect the sewage piping from the trailer and dispose of any waste water at the base of operations where sewage disposal was indicated on the application for the mobile unit food service permit.
Rule:
511-6-1.06(4)(h),(i) - Approved Sewage Disposal; System; Other Liquid Wastes and Rainwater (P) (C) (h) Approved Sewage Disposal System. Newly constructed or converted fixed food service establishments shall dispose sewage through an approved facility that is:

A public sewage treatment plant if connection to such system is available within two hundred feet (200’) of the property line, or available in a public right-of-way abutting the property of the fixed food service establishment ;P or

An individual on-site sewage disposal system that is sized, constructed, maintained, and operated according to law. P and

In the event of an individual on-site sewage disposal system failure, a connection shall be made to public or community sewage disposal system if such system is available within two hundred feet (200’) of the property line, or available in a public right-of-way abutting the property of a fixed food service establishment. P
(i) Other Liquid Wastes and Rainwater. Condensate drainage and other non-sewage liquids and rainwater shall be drained from point of discharge to disposal according to law.
