6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food items (macaroni and cheese and sour cream) cold holding above 41 F in the reach-in cooler. (COS- PIC disposed food items.)
RCA: All TCS food items are cold-holding at 41 F or below at all times.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
In the dry storage area, observed employee's jacket stored above a box of parboiled rice, employee's water bottle stored above salt on the storage rack, and an employees purse stored above a box of "Ginseng Up".
RCA: Ensure to use designated lockers to ensure employee's personal items are stored below and/or away from food service items at all times.
