COS: PIC removed container from hand wash sink.

RCA: Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor.

COS CA: PIC supplied paper towels. Each handwashing sink or group of adjacent handwashing sinks shall be provided with Individual, disposable towels.

Observed two items (fish nuggets and potato logs) under 135 F. COS= Corrected on Site COS: PIC replaced items out of temperature with a fresh batch of items out of hot holding cabinets. RCA: Hot-holding items should be at a temperature of 135 F or above at all times to maintain food safety.
