Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed cooked shrimp and pork mixture marked with a discard date of 5/31 and still being stored in the reach in cooler of the main kitchen. Observed a container of ready-to-eat (RTE) goat cheese without a date mark inside of the reach-in unit.
CA/COS: PIC voluntarily discarded the cooked shrimp and pork mixture and the undated goat cheese.
RCA: Ready-to-Eat, Time/Temperature Control for Safety Food, Disposition.
A food that requires date marking shall be discarded if it:
Exceeds 7 days, not including the time that the product is frozen; Is in a container or package that does not bear a date mark; or Is marked with a date that exceeds the allowable 7-day disposition period.
