4-1A - food separated and protected
Regulation: 511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - packaged & unpackaged food separation, packaging, and segregation (p, c)
Observed raw bacon and raw eggs stored over RTE items (lettuces, cheeses condiments etc.) in reach-in cooler. CA: Had PIC rearrange items based on flow storage of food model. RCA: (RCA): Food shall be protected from cross contamination by separating raw animal foods during preparation, storage, holding, and display from raw, ready-to-eat foods such as fruits and vegetables and cooked, ready-to-eat food.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed heavy debris on the bottom of the reach in coolers. Rule: (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed walls in prep area and dry goods to have food debris accumulation. RCA: PIC shall increase the cleaning frequency to put up barriers to protect against food splatter. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee cell phone stored on shelving unit over prep area. CA: Had PIC remove cell phone and store in designated area. RCA: Educated PIC on proper storage of employee items. Items cannot be stored over or on prep areas. Items can also not be stored over or next to single service items, clean dishes, or food product.
