Observed knife and spatula stored between equipment on the sandwich prep line.

CA: PIC moved items to proper storage location on the prep line. Advised can used magnetic strip attached to equipment wall for storage.

RCA: In-use utensils can be stored on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment

Observed french fry cups stored with the food contact surface up and not protected from potential contamination.

CA: PIC inverted all of the french fry cups.

RCA: Single service plates, cups, etc., should be inverted in order to protect items from potential sources of contamination.

Rule: Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. Observation: Observed two employees in the food preparation area preparing food without utilizing proper hair restraints. Notified PIC. PIC provided hair restraints for all employees.

Observed spilled milk residue on inside drawer of reach-in cooler. Observed mildew-like substance on gasket of reach-in cooler.

RCA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
