2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Observed no soap available at the hand sink in the back of the kitchen at the ware washing area.
CA: PIC stocked sink with soap. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed no paper towels at the hand sink in the back of the kitchen at the ware washing area. Upon discussing, PIC stated they have been waiting for the dispenser to be replaced.
CA: PIC stocked sink with paper towels. PIC advised to place a stack/ roll of paper towels at the sink so that they are available for use. Each handwashing sink or group of adjacent handwashing sinks shall be provided with: individual, disposable towels; or a continuous towel system that supplies the user with a clean towel.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the dish machine not sanitizing between 50-100ppm. Further observed that the chlorine dispensing container was empty. Upon discussion with PIC there was found to be no more chlorine sanitizer available for the dish machine.
RCA: PIC advised to have employees use the 3 compartment sink for sanitization until the chlorine sanitizer is available. Items in the dish machine are to be re-sanitized in the 3 compartment sink.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed there were no test strips available for QUAT and chlorine sanitizer.
RCA: PIC shall ensure test strips are available for both methods of sanitization within the facility. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed heavy build-up of food debris and moisture in the bottom and on the shelves of the pizza assembly reach-in cooler.
RCA: PIC shall have the unit cleaned and enforce regular cleaning of equipment to prevent harborage of food debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed old food debris under the racks in the walk-in cooler.
RCA: PIC shall have areas of concern cleaned and enforce regular cleaning of the floors to prevent the build-up/ harborage of food debris. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
