Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed walk-in unit fans to have heavy white residue build-up. Observed walk-in unit racks to have an accumulation of rust and white residue.
RCA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(g) - mechanical ventilation, sufficient capacity to prevent buildup of heat, steam, smoke, fumes & odors (c)
Observed the presence of mildew-like substance inside the walk-in unit of the main kitchen.
RCA: Mechanical Ventilation — Sufficient capacity to prevent buildup of heat, steam, smoke, fumes, and odors. If necessary to keep rooms free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes, mechanical ventilation of sufficient capacity shall be provided.
