Observed walk-in cooler temperature at 43F. Observed TCS foods holding above 41F.
RCA: PIC stated that unit may have been held open during prep. PIC stated he would put in a maintenance request. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below.
