Observed raw pork belly above RTE vegetables in the kitchen reach-in cooler while various raw sushi-grade fish were stored above RTE avocados in the front cooler in the sushi area. (COS- PIC placed raw pork belly on the bottom shelf while the vegetables were moved to the other side of the cooler.) Ensure to store RTE food items above or away from raw animal food items and arrange the raw animal food items according to its minimum internal cooking temperature, with the lowest on top.

COS CA: PIC added water to sanitizer solution to correct concentration. Poisonous or toxic materials shall be used according to Law and this Chapter; Manufacturer's use directions included in labeling, and, for a pesticide, manufacturer's label instructions that state that use is allowed in a food service establishment.

Observed raw shell eggs next to milk, lemon juice, and chocolate sauce. CA: PIC removed shell eggs and separated from RTE food.

Observed oil container on floor in main kitchen area. CA: Employee removed oil from floor to be 6" off the floor.
