Observed rice cooling in large containers that were not vented and placed in small reach-in cooler. Reach-in cooler had condensation on the inside glass pane and internal temperature around rice was higher than the safe 41F. COS: PIC discarded rice. Only one other TCS-food item (pork) was within the cooler. Pork had an internal temperature of 41F, in SAFE zone. CA: 511-6-1.04(6)(e) - Cooling Methods (Pf, C) (e) Cooling Methods.

1. Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled:

(i) Placing the food in shallow pans; Pf

(ii) Separating the food into smaller or thinner portions; Pf

(iii) Using rapid cooling equipment; Pf

(iv) Stirring the food in a container placed in an ice water bath; Pf

Observed cloth napkins being used to cover non-food contact surfaces in the main kitchen, such as, under sauces, plates, glassware, pots and pans, and lining equipment. Observed cloth napkin being used to cover a bowl of just cut raw chicken in the walk in cooler. RCA: Wiping Cloths, Use Limitation: (ii) Used for no other purpose.
