Observed multiple dishware in main kitchen, not stored inverted or covered and protected from overhead contamination. CA: PIC shall invert plates or use a cover plate. RCA: Clean equipment and utensils shall be stored Covered or inverted.

Regulation: 511-6-1.05(1)(g) - wood, use limitation (c)
Observed multiple wooden cutting boards in the facility. RCA: Close-grained hardwoods are only permitted as food-contact surfaces within the facility. Cutting boards shall be made of plastic or other commercial-grade approved surface.
