Observed an ice scoop in the bar area to be stored behind a liquor bottle.
RCA: Staff shall store ice-scoop in a clean area with handle up as to prevent contamination from surrounding surfaces and equipment.

Observed large plastic containers in dish area to be stacked while still wet.
RCA: Kitchenware shall be air-dried or used after adequate draining before contact with food and may not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Observed all the following items to be stored upwards and in a way that does not protect from overhead contamination: Glasses in the servers area, bowls by the soda dispensers, single-use items and bowls above steam wells.
RCA: Single-use articles and cleaned and sanitized utensils shall be handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented.

Observed build-up of debris on the bottom of reach in cooler where drinking glasses and drink flavors are stored. Observed a build-up of debris and water in bottom of cooler where bar TCS items are stored.
RCA: Staff-members shall increase cleaning frequency of reach-in coolers in bar area. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

In cook line reach in cooler, observed raw fish stored directly next to raw chorizo. In same cooler observed raw chicken stored next to raw whole cut beef. In same cooler, observed raw beef stored below raw chicken. In walk-in cooler observed raw chicken stored directly next to raw shelled eggs and raw fish. CA: PIC rearranged both coolers according to cook temperatures. Recommend labeling shelves to prevent separation issues in future.

Observed cheese dip being cooled in tall plastic containers. Cheese was within the safe zone but was cooling slowly. CA: PIC had staff divide the cheese dip into multiple shallow metal pans and placed into ice baths to rapidly cool. PIC will have employees cool within the metal pans and then combine into large containers once at the appropriate cooling temperature.
