Observed quat sanitizer not dispensing from 3-compartment sink. Sanitizer must dispense at 200-400 ppm or as specified on manufacturers instruction. Unable to correct onsite.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed food trays being cleaned with sanitizer wipes at 0 ppm. Facility uses dry cloth wipes in a bucket and adds sanitizer from 3-comp sink into bucket to saturate the cloths. Food trays are not washed after each customer use but sanitized with wipe instead, which is permitted as long as sanitizer concentration is within required range.
COS by washing trays in high temp dish machine. All trays must be washed in this manner after each use until sanitizer is available.
