Observed several time/temperature control for safety (TCS) items cold held at temperatures above 41°F in reach in cooler next to ice cream machine. All TCS foods must be cold held at 41°F or below. The ambient air temperature (AAT) was 48°F. PIC explained that the unit was just recently serviced, and will have maintenance come look at it again. Health authority suggested to use the other RICs to hold TCS items until it is fixed. COS by discarding.

Observed several bags of different kinds of cheeses with a prep date of 6/15/24. A food that requires datemarking shall be discarded if it:
(i) Exceeds 7 days, not including the time that the product is frozen; P
(ii) Is in a container or package that does not bear a date or day; P or
(iii) Is appropriately marked with a date or day that exceeds 7 days . P
COS by discarding.
