Observed mold-like accumulation inside bulk ice machine in main kitchen area and in ice machine above soda dispenser. Food contact surfaces shall be cleaned at a rate that prevents accumulation. Must clean at a more frequent pace. Must empty ice and deep clean inside ice machine within 72 hours.

Observed sliced tomatoes and cheese cold held at 43°F. All TCS food items must be cold held at 41°F or below. COS by closing prep top to allow TCS items to cool down.

Observed beef roast hot held at 129°F. All TCS foods must be hot held at 135°F or above. COS by discarding and adding more water to the steam table.
