Observed several time/temperature control for safety (TCS) foods cold held above 41°F in both reach in coolers. TCS foods must be cold held at 41°F or below. Both RICs had an ambient air temperature of 44°F. COS by moving TCS items to the reach in freezer. Kitchen was hot. Health Authority suggests adjusting AC and/or ventilation. Will have to do an informal follow up in a few days to ensure both coolers are fixed and can maintain food at 41°F or below.

Observed slices of cheese temping 50°F stacked too high in prep top, sticking out of temperature control. TCS food must be cold held at 41°F or below. COS by taking some slices out and putting them in reach in freezer.

Observed spatula being used to handle raw beef being used to handle burger buns. There must be separate utensils used to hand raw meats and ready-to-eat foods. Corrective action: discard buns and bring out another spatula.

Observed the concentration of chlorine sanitizer greater than 100ppm. Must be between 50 and 100ppm. COS by bringing the concentration down to 100ppm.

Observed the brown food bags stored on the rack in the bathroom. Must store in the kitchen. Do not store any food or food contact utensils, single use items in the bathroom.. COS by moving the box to the kitchen.
