6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed milk in milk cooler being cold held above 41°F. Ambient temperature of unit was ~50°F. TCS foods must be cold held at 41°F or below. COS by moving milk to a different cooler. Milk was lower in temperature as it was recently brought out from walk-in.
