4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed quat sanitizer in 3-compartment sink and in spray bottles at 0 ppm. Chemical in container was empty. Quat sanitizer must dispense at 150-200 ppm or as stated on manufacturers instructions. COS by replacing empty container. Sanitizer then dispensed at 200 ppm. Spray bottles were emptied and refilled.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed cooked pork and chicken with a thaw date of 9/11 stored in front cooler. Also observed sour cream that expired 08/2025 and buttermilk that expired 07/2025 stored in back reach-in cooler.
- A food that requires datemarking shall be discarded if it:
(i) Exceeds 7 days, not including the time that the product is frozen; P
(ii) Is in a container or package that does not bear a date or day; P or
(iii) Is inappropriately marked with a date or day that exceeds 7 days. P
COS by discarding.
NOTE: frozen TCS food must be dated with date of prep AND date of thaw.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no quat test strips onsite. CFSM was attempting to use pH test strips to check sanitizer concentration. Must locate or purchase new quat test strips.
