6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Penne pasta in reach-in cooler #4 held at a temperature above 41F. Corrective action (CA): All time/temperature control for safety (TCS) foods must be held at 41F or below for cold holding. Person in charge (PIC) discarded pasta as it had been held longer than 4 hours.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Multiple wet cloths stored on prep surfaces in kitchen. PIC moved wet cloths into sanitizer buckets.
