Regulation: 511-6-1.05(6)(l) - mechanical warewashing, hot water sanitization temperatures(p)
Observed hot water sanitizing warewash machine not reaching 160F at plate. Corrective action (CA): Hot water must reach at least 160F at plate to sanitize. Warewash machine can be used to wash trays but they must be sanitized in 3-compartment sink.

Observed light in walk-in cooler not functional.
