Trays of mac & cheese in lowboy cooler not cooled to 41F within 6 hours (temperature of cooling product was 64F after 6 1/2 hours). Corrective action (CA): Time/temperature control for safety (TCS) foods shall be properly cooled using 2-stage cooling: 1) 135F to 70F within 2 hours, and 2) 70F to 41F within an additional 4 hours. Mac & cheese discarded.
