Observed quaternary ammonium compound (Quat) concentration less than 200 ppm at 3-compartment sink. Corrective action (CA): For sanitizing, Quat must be between 200-400 ppm. Person in charge (PIC) refilled sanitizer at 3-compartment sink dispenser. Quat concentration 400 ppm.

Observed time/temperature control for safety (TCS) in kitchen make table at temperature greater than 41F. Corrective action (CA): TCS foods being cold held must be maintained at 41F or below. TCS foods in unit longer than 4 hours discarded. TCS foods will only be stored in top of unit using time as a public health control (TPHC). Foods will be discarded every 4 hours.
