Person in charge (PIC) not monitoring for recorded receiving temperatures on key drop deliveries. Corrective action (CA): PIC must monitor receiving records for temperatures of received goods during key drop deliveries to ensure food safety.

Observed open employee bottle of water stored over food in make table. CA: All employee drinks must be in a single-use cup with straw and lid stored away from food and prep surfaces. PIC removed water bottle.

Observed shelving and fan in walk-in cooler with buildup of debris and mold-like substance.

Vent hood needs to be cleaned; buildup of grease and debris is heavy.
