Observed the high temp dish machine reach a final rinse temperature of 150F. Advised PIC the final rinse temperature shall at least reach 165F for a single rack dish machine. Advised to wash-rinse-sanitize in the 3-compartment sink.

Observed several TCS (tomatoes, half & half, and waffle batter cold holding temperatures above 41 degrees. CA cold holding shall be maintained at 41 degrees or below. COS: PIC discarded items
Observed expired TPHC shell eggs in the basket at the grill. Advised PIC when using TPHC all items shall be discarded at the expiration time indicated on the label.
