6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS foods, (cheese pizza, chicken, whole milk)cold holding in the front milk cooler and main kitchen rack above 41°F. Advised PIC all TCS foods shall cold hold or below. Corrected on site: Milk was relocated to the WIC, Chicken was placed in the oven and pizza placed in the WIF.
