Observed in the main kitchen’s prep top cooker , a container of raw shell eggs stored behind a container of chopped onions. Also observed in the main kitchen’s WIC a container of raw shrimp and raw chicken stored above multiple packages of eggroll wrappers. Foods, raw and ready to eat, shall be stored according to final internal cook temperature. COS: PIC rearranged prep top cooler and WIC for proper storage hierarchy.

Observed in the main kitchen visible light entry of the screen door with the back door open. Outer openings of a food service establishment shall be protected against the entry of rodents and pest by solid, self-closing, tight fitting doors. COS: PIC closed the back door of the establishment to eliminate visible light entry.
