6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed hot dogs at front service measuring below 135 degrees F. Advised to discard. Advised must either hot hold TCS food items or use time as a public health control with proper written policy. CA: All TCS food items shall be hot held at 135 degrees F or above.
2-2A - management knowledge, responsibilities, reporting

PIC just had one signed employee health form. Advised all employees must be notified in a verifiable manner of their responsibility to report food borne illnesses. COS: PIC had extra forms and had other employees sign. CA: Food employees and conditional employees are informed in a verifiable manner of their responsibility to report in accordance with the Chapter, to the person in charge, information about their health and activities as they relate to diseases that are transmissible through food.
