Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed multiple cases of bologna cold holding in the temperature danger zone holding above 41 degrees D. Advised PIC that all raw and RTE TCS foods shall properly cold hold at 41 degrees F. or below. COS: Multiple cases (3) of bologna were discarded
10D - food properly labeled; original container
Regulation: 511-6-1.07(4)(c) - segregation, distressed food segregated and properly located (pf)
Observed multiple gallons of expired milk and multiple containers of hot dog buns expired (milk: 11/15/2025) (hot dog buns: 11/13/2025). Advised PIC that all foods shall be in good condition and unexpired. COS: PIC discarded multiple gallons of expired milk and containers of hot dog buns.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(q)1&3 - good repair & calibration (c)
Observed ambient temperature of RIC #1 at 64 degrees F and RIC with an ambient temperature of 60 degrees F. Advised PIC that all equipment shall be in good repair and ambient air shall be in the range of intended use. Advised to have unit serviced.
